Squibb Coffee Bar Opening Their Downtown Market Location this Friday, June 25th

New space will feature traditional coffee drinks, teas, topped toasts and Rise Authentic Baking Co. pastries.

The Grand Rapids Downtown Market today announced that Squibb Coffee Bar will celebrate the grand opening of their new location in the Market this Friday, June 25. In addition to being open to the Market Hall, the cafe, located adjacent to Slows Bar-B-Q, will offer a dedicated entrance on Ionia Street, allowing for direct customer access and early daily opening times.

Owners Mallory and Dennis Squibb, a father and daughter team who opened their original Wealthy Street location in November of 2016, are enthusiastic about cutting the ribbon at their new café at the Downtown Market. “We’ve had a great team working hard to get the coffee bar ready, from the initial planning to the final buildout, and we are thrilled to welcome people into this unique space,” said Mallory.

In addition to traditionally prepared coffee and tea beverages, Squibb will also offer vegan donut and pastry options from Rise Authentic Baking Co., who they partnered with in 2018 to open Rise + Squibb on Fulton Street. A menu of housemade toasts will also be available, prepared with bread from neighboring Market merchant Field & Fire, along with locally sourced jams and toppings.

Squibb prepares their coffee beverages using beans from Onyx Coffee, a craft roaster in Arkansas that ethically sources their single-origin beans and roasts them to Squibb’s specifications. “We feel that in order to make the best coffee drinks, you start with exceptional ingredients. Our baristas pride themselves on the preparation process, and we invite our customers to learn more about the craft,” said Mallory. This process includes manual espresso machines, which allows Squibb’s baristas to control the quality and consistency of every espresso shot used in their beverages. “We love providing a relaxing experience for our visitors, and want to create a friendly, cozy environment where everyone can enjoy excellent beverages and food.”

Part of this welcoming atmosphere includes a floor to ceiling mural painted by local artist and Pratt Institute of Art Student, Nina Lu. “Mallory had ideas about the color scheme and general subject matter, but she was very trusting and open-minded. I made sure the colors and composition were chosen to match the vibrant hustle of the Downtown Market,” notes Lu. The nature-forward mural is inspired by Lu’s connection to growing up camping and backpacking. Despite her time at Pratt in New York, Lu states, “I will always have a deep love for Michigan; the intersection of art and environmental science is a consistent passion of mine. Ultimately, I'm drawn back to this state because of the people and the woods!”

“We are delighted to welcome Mallory and Dennis to the Market as they grow Squibb into its third location,” said Mimi Fritz, president and CEO of the Downtown Market. “The staff at Squibb take great pride and care in the preparation of their menu items, and our visitors will certainly embrace the beautiful atmosphere and addition of a morning dining option to the Market.”

Squibb’s Downtown Market hours will be Monday - Thursday 8am-7pm, Friday and Saturday 8am-8pm and Sunday 9am-7pm. To learn more about Squibb, visit squibbgr.com; for their Downtown Market menu and information about the Market, click here.
